김상효 이계임 박미성 이욱직 유기환 신성용 강소라 허성윤 2022-05-03T16:40:00Z 2022-05-03T16:40:00Z 2021-12-30 979-11-6149-533-0 R945 https://repository.krei.re.kr/handle/2018.oak/28301 외식산업은 국내 및 지역 농업과 긴밀하게 연관되며, 소비자와의 접점이 매우 광범위하다. 온실가스 감축 등 환경의 지속가능성을 언급할 때 빠지지 않고 등장하는 것이 농축산업 생산활동인데, 외식산업은 농축산업 생산물(식재료)의 최대 수요자이다. 먹거리와 관련한 환경의 지속가능성을 추구할 때 1차 산업과 소비자를 연결하는 중간다리로서 매우 다양하고 중요한 역할을 하는 것이 외식산업이기 때문에, 지속가능성이라는 관점으로 산업과 시장의 실태를 점검함으로써 미래 지향적인 대응과제를 도출할 필요가 있다. 3개년 연구로 추진하고 있는 이 연구는 외식산업 분야를 포용성장과 지속가능성이라는 ‘가치 프리즘’을 통과하여 바라보고 점검·평가함으로써, 미래지향적인 대응과제를 도출하기 위해 수행되었다. 1년 차 연구에서는 식품제조업 분야를 다루었고, 올해 2년 차 연구에서는 외식산업 분야를 다룬다. 사회 전반의 포용성을 강화하고 지속가능성을 개선하는 방향으로 대응과제를 도출함에 있어서는 ① 외식산업의 준비된 창·폐업을 도모, ② 영업이익률을 정상화하기 위한 다양한 경영안정 방안 마련 , ③ 국내 및 지역 농업과의 연계를 통한 산업 간 포용성 강화에 기여, ④ 외식업체와 소비자가 함께하는 사회적 책임 이행 풍토 확립 등의 방향성을 견지하고자 하였다. 연구의 결과가 ‘외식산업진흥기본계획(2022~26)’ 수립에 활용되는 것 또한 이 연구의 주요 목적 중 하나이다. Chapter 1. Introduction Background and Purpose ○ The food service industry in South Korea is characterized by a very high proportion of small restaurants. Small restaurants not only have limitations in leading the price determination of their meal services, but also have no choice but to accept the price of production such as food ingredient prices and labor costs as a given. And the food service industry in South Korea has a low operating profit margin due to a fierce competition. As a result, the korea food service industry has high closure rates and low survival rates. On the other hand, due to the nature of the food service industry, which accounts for half of the nation's dietary life, it has a wide range of customer touch points, and it plays a very important role in terms of supporting diet for the economic vulnerable groups. In addition, as a major consumer of agricultural and livestock products produced domestically and locally, the food service industry is an important economic subject that can drive and embrace the growth of agriculture. In summary, the food service industry has the following characteristics. ① the high proportion of small businesses, ② low operating profit margins and survival rates, and the high rate of business closure, ③ food service industry can be connected with various ways to ensure the right to adequate food for the vulnerable groups, ④ considering that agriculture, which is a vulnerable industry, the food service industry is a major consumer of agricutural and livestock products that can embrace agriculture, it is highly necessary to examine the situation and status of the industry, and to review and improve related policies from the perspective of inclusive growth.
