박기환 황윤재 전무경 2025-01-14T16:40:00Z 2025-01-14T16:40:00Z 2024-10-30 979-116149-718-1 R2024-06 https://repository.krei.re.kr/handle/2018.oak/31452 채식주의(Vegetarianism)는 식물성 식품을 주로 섭취하면서 동물성 식품을 완전히 제한하는 것을 의미하며, 과거에는 이를 지향하는 일부만이 채식을 실천하였다. 그러나 최근 세계적으로 건강관리의 관심과 환경 보호·탄소 절감 의식 강화, 동물보호와 동물복지 등의 관심이 높아지면서 세계 채식 인구수는 물론, 채식 산업의 시장 규모도 계속 증가하고 있다. 우리나라도 채식 인구 증가로 채식 식품의 출시가 이어지고 있으며, 채식 음식을 취급하는 음식점과 단체 급식 기관들도 확대되는 추세이다. 이처럼 채식 산업의 확장으로 이른바 비거노믹스(Veganomics)라는 신조어도 생겨났으며, 채식 식품산업을 필두로 패션업계, 화장품산업 등에서도 채식과 관련된 경제적 활동이 활발히 전개되고 있다. 특히, 채식 식품산업은 식물성 기반 원료를 사용하기 때문에 농산물이 원료로써 상당한 역할을 담당하고 있어 식품산업과 농업과의 연계 측면에서도 매우 중요한 산업이다. 이에 따라 이 연구는 채식 식품산업과 관련된 각 주체별 현황과 실태를 면밀히 파악하여 채식 식품산업이 농식품 산업의 신성장 동력원으로서 중추적 역할을 담당할 수 있도록 세부 전략을 제시하고자 수행되었다. Purpose of Research ○With growing global awareness of health management, environmental protection, carbon reduction, as well as increased interest in animal protection and welfare, the global vegetarian population and the market size of the vegetarian industry have continuously expanded, with further growth projections dominating future forecasts. In South Korea, the rise in the vegetarian population has led to the introduction of vegetarian food and beverage products, and the number of restaurants offering vegetarian menus to attract customers is increasing. Additionally, vegetarian meals are becoming a regular feature in group and school meal services. ○However, despite this growth, there is no official statistical data available on the vegetarian food industry, and there has been no comprehensive survey to assess the current state of the industry. This gap limits the ability to fully understand the policy demands and consumer needs of stakeholders in the sector. ○Therefore, this study aims to thoroughly analyze the current state and trends across various stakeholders within the vegetarian food industry and provide key development tasks and detailed strategies to foster the industry as a new growth engine for the agri-food sector.
