김치 조달 형태에 영향을 미치는 요인 분석

Abstract

본 연구는 한국농촌경제연구원의 2017년 식품소비행태조사’의 원시자료를 이용하여 김치소비가구의 김치조달 형태에 영향을 미치는 요인을 분석하였다. 김치 소비가구의 김치 조달 형태에 영향을 미치는 요인을 분석하기 위해 종속변수를 ‘김장 가구’, ‘얻음 가구’, ‘구입 가구’로 구분하여 다항 로짓 분석을 하였다. 분석결과, 쌀을 구입하는 빈도가 낮을수록 김치를 얻어서 먹는 확률이 높았으며, 학력이 높은 경우에는 상품김치를 구매할 확률이 높은 것으로 나타났다. 사무직 또는 서비스직에 근무할수록 김치를 얻어먹거나 구입해서 먹는 확률이 높게 나타났다. 가구의 식생활 특성 가운데 간편식, 외식, 배달·테이크아웃 이용 빈도가 김치 조달 형태에 유의미한 영향을 주는 것으로 분석되었다. 간편식 및 외식의 증가 등 현대인의 식생활의 변화는 쌀 섭취량에 영향을 미칠 뿐만 아니라 김치 조달 형태에도 유의미한 영향을 미치고 있다는 것을 알 수 있다. 분석결과에 근거하여, 김치제조업체들은 김치를 외부로부터 얻어먹거나 상품김치를 구입하여 소비하는 가구의 특성을 파악하여, 소비자 특성별 맞춤형 상품김치 판매 전략을 수립할 필요가 있다.

The purpose of this study is to analyze the characteristics of kimchi procurement channels. The study uses raw data of the 'Food Consumption Behavior Survey in 2017' conducted by the Korea Rural Economic Institute. Among various socio-economic factors, age, personal income, gender, household structure, frequency of taking food away from home are selected as explanatory variables. In order to analyze the factors affecting the characteristics of kimchi procurement channels, a multinomial logit model was used. The results showed that the factors affecting kimchi procurement channels were gender and age of food purchaser in the household, household income, household structure, and frequency of taking food away from home.
